Celebrate this time of year ~ accomplishments,
memories, family ~ as we turn the corner to
greet summer!
RECIPE
Pork Chops with Meritage Fig
Sauce SHARE
Place 4 boneless pork
loin chops (about 8 oz each) between plastic wrap;
pound down to 1" thickness. Season with sea
salt, fresh ground pepper, and chipotle. Swirl
1 Tbsp olive oil into a large skillet and heat. Sear
loin chops till each side is golden brown. Move pork
to a warming plate.
Reduce heat, add ½ c
minced onion and sauté for 2 minutes. Add 2
large garlic cloves, minced, and sauté another
minute. Pour in ½ cup Cañon
de Sol Meritage and stir to deglaze the pan,
scraping up browned bits. Cook 1 minute then add 1 c
chicken broth, plus 1 tsp thyme leaves and 1 cup
diced fresh figs. Cook over medium heat about 10
minutes, stirring often and mashing the figs until
the sauce is thickened.
Return chops to the
pan along with any juices from the platter. Coat
both sides with sauce; simmer for 2 minutes
or till pork is done to taste.
Serve pork drizzled with
the wine & fig sauce. Garnish with steamed
baby carrots plus a sprig of cilantro. And, of
course, accompany with Cañon
de Sol Meritage.
