Tip:
If
you get a wine that is too heavy with
tannin, let it breathe for a few hours to
soften them. If you have other bottles
of the same wine, put them away and wait a
few years. During that time, the tannins
mellow out, and allow other flavors to
emerge. Tannins allow wines to achieve their
potential.
You may find something wonderful once
they've had a chance to mature.

This is the month of the barbeque! Not to be
confused with "grilling" or with cooking meat over
open fire, BBQ is to slow-cook meat at a low
temperature for a long time over wood or charcoal
(not gas). But, let's not get picky. In honor of
National BBQ month, here is a tasty and tangy sauce
you can use as a serving sauce or as a basting sauce
(and it works well on just about any meat).
RECIPE
Red Wine & Chipotle Chili Barbeque Sauce
SHARE
In a medium
saucepan, add 1 tbsp olive oil, 2 cloves garlic—minced,
1/4 tsp chipotle chili powder, and 1/4 tsp cumin
plus salt and pepper to taste. Allow to heat
through, while stirring continuously, for 1 minute.
Stir in 1/3 c
Cañon de Sol
Merlot
and 1 tbsp brown sugar. Toss in 1/2 c chopped green
onions. Simmer for 2-3 minutes. Add in 1 tbsp soy sauce, 1 tbsp balsamic vinegar,
1/2 c tomato paste, and 1 tsp Worcestershire sauce.
Simmer for 2 minutes more. Remove from heat, allow
to cool slightly before using.
Baste your meat with this sauce during cooking, then
drizzle some over the plated dish just before
serving. And of course, this will pair well with
Cañon de Sol
Merlot.
