tasting wine. Wine is usually made from
grapes. However, most wines don't taste like
grapes. Depending on the wine, subtle fruit
flavors like cherry, blackberry, currant,
and plum are more likely. They are the
result of fermentation, when fruit juice
changes into something new and different
that no longer tastes like the fruit from
which it came.

Spring is in the air. This customary casserole is a
delight any way you dish it up. It is comfort food
during this
National Stress Awareness Month. We recently
served it to the delight of friends, so had to share
it.
RECIPE
Cañon
de Sol Scalloped Potatoes
SHARE
Heat oven to 375° then peel 8 medium red potatoes;
rinse well and slice thinly into a large bowl. Set
aside.
In a medium saucepan, melt 1 tbsp butter. Add a
sprig of rosemary, chopped plus 2 large garlic
cloves, minced plus 6 green onions, sliced and
sauté. Add 2 cups heavy whipping cream with 1
tsp salt and 1 tsp ground white pepper. Cook,
stirring, till thick and bubbly.
Pour sauce over potatoes and mix well. Spoon mixture
into an 11 x 9 inch baking dish. Bake for 1
hour (until potatoes are tender) and a light brown
skin covers the dish.
Serve alongside your favorite meat or poultry dish
(we suggest baked ham or roasted pork loin). Add a
couple spears of steamed asparagus. And pair with
our Viognier.
