Tip:
Let's
get more familiar with tannins. You've
likely tasted them before (they are found in
black tea). To get a perfect taste of
tannin, just steep a tea bag for 30 minutes
rather than the usual five. The result
should give you a perfect idea of what
straight tannin tastes like. It makes your
mouth feel dry, taut, and bitter.

As we warm up to spring, we notice evenings linger
longer!
Before the weather turns us outdoors, here is an
all-time favorite dish that s fun to make and to
serve at your next gathering.
COQ AU VIN (chicken in wine)
SHARE
Cook 1 lb. of bacon over medium heat in a large
Dutch oven until crisp, about 8 minutes. Remove with
a slotted spoon and set aside.
Season 8 chicken thighs generously with salt and
pepper, and brown the pieces skin side down in the
bacon drippings. Cook 4 minutes then turn over and
cook another 4 minutes. Remove from pan and set
aside.
Pour off half of the pan drippings
then add 1 lb pearl onions, 8 smashed garlic cloves,
and 1 lb button mushrooms halved. Sauté over
medium-high heat until browned, about 6 minutes.
Stir in 3
peeled
russet potatoes cut into large rounds,
plus 3 peeled carrots cut into 2-inch pieces. Add 1
1/2 tsp. salt and 1/3 c. flour, stir to coat the
vegetables.
Add 3 cups of
Cañon de Sol
Syrah, 2 cups chicken broth, and stir till smooth.
Add chicken, 4 sprigs of thyme, 2 bay leaves, plus
half of the bacon and bring to a boil, then reduce
to simmer. Cover and braise 35-40 minutes
until the chicken and vegetables are almost tender.
Then uncover and cook till sauce thickens.
Stir in 1/2 cup roughly chopped parsley leaves and
tbsp. balsamic vinegar. Add salt & pepper to taste.
Place potatoes onto each plate, lay 2 pieces of
chicken next to them. Spoon sauce over the chicken.
Garnish with the remaining bacon and some parsley.
Accompany with
Cañon de Sol
Syrah.
