marks the 100th anniversary of Mother's Day!
Flowers are blooming, nature
is in a state of rebirth and renewal. And mothers
everywhere are getting special attention from their
families. In celebration of all
moms, we suggest this simple dish from Mother Earth
to treat mom ... and everyone else!
Parmesan Portobello Mushrooms
1 T extra virgin olive oil
4 firm Portobello mushrooms (stems & gills removed)
3/4 C ricotta cheese
1/2 C shredded mozzarella cheese
1 clove garlic, minced
1 medium tomato, thinly sliced
1 T fresh thyme leaves
3 T grated parmesan cheese
Add oil to a heated ovenproof skillet. Lay
mushrooms cap-side down and cook 10 minutes, flip
and cook 10 minutes on the other side. Flip
cap-side down again.
Combine ricotta, mozzarella and garlic in a bowl.
Season with pepper to taste. Spoon the mixture
into evenly each mushroom cap, inside the pan.
Preheat broiler. Arrange a few tomato slices
on each mushroom and sprinkle evenly with thyme and
parmesan. Broil about 5 minutes (until tops
turn golden brown). Serve with fresh greens and sliced avocado.
Pair with Viognier.
