Fish
On! We spent some time in Cabo San Lucas
during the holidays, and caught a very nice time.
It is always good for health and happiness to spend
time with loved ones and to share in an adventure.
In celebration,
we give you this recipe for fresh fish ... and,
since we are well on our way with New Year's
Resolutions, this one is to your health.
Steaming is an excellent way to avoid adding extra
calories to your meal.

Rinse fish with cold water and set on steaming
rack.

Ensure that the fish is above the liquid, not
resting in it.

Steam 6 to 12 minutes per inch of thickness.
Remove
fish from steamer and garnish with cilantro and
green onion. Complete the dish with fresh salsa or
chipotle and corn tortillas. Serve with Meritage ...
Viognier pairs well, too. Quite simple and
quite delicious!
