What better way to warm up in winter than with hot,
stuffed peppers? How 'bout pairing them with a
wonderful
Cañon
de Sol wine! And, to make things just a little
more festive, splash some cranberry juice into your
glass of Viognier (I know, we mentioned it before -
but just in case you needed reminding).
STUFFED RED BELL PEPPERS
Preheat oven to 350 degrees. Boil 11/3
cups water in a saucepan. Add
2/3
cup
quinoa (rinsed & drained). Reduce heat, cover &
simmer for 15 minutes. Keep covered and set aside.
Bring a large pot of water to a boil and add
peppers. Boil for 5 minutes. Drain.
Heat 1 tablespoon of oil. Add
3/4
cup diced carrots and cook for 3 minutes. Then add
1/2
red onion, diced and cook another 5 minutes.
Stir in 10 ounces of spinach (thawed & drained) plus
a 15 ounce can of kidney beans (rinsed & drained).
Remove from heat and stir in quinoa. Add a
teaspoon of chili powder.
Fill peppers with the quinoa mixture and place
upright in a baking dish.
Add a thin layer of water to cover the bottom of the
dish.
Sprinkle with grated jack cheese. Bake for 20
minutes (till tops are lightly browned).
Garnish with
sliced avocado and a sprig of cilantro.
