 Tip:

 

Another common element in wine is acidity.  Acid gives wine its "zing" ~ the tartness that enlivens the other flavors.  Like adding lemon to water - it doesn't change the taste of the water much but it makes it more refreshing.  That's acidity.  Not enough and the wine is flat.  Too much can overwhelm.  Just right, it enhances flavor.

As we head toward Thanksgiving, and the weather chills, we find that this soup is a wonderful warming trend.

 

Shrimp & Chorizo Soup

Prepare 2 pounds medium shrimp, shelled & deveined.  Simmer the shells in 2 quarts chicken broth for 10 minutes, covered.  Strain the broth & discard the shells.

 

In a large cook pot, cook 8 ounces dry chorizo, peeled & thinly sliced, stirring occasionally till browned (about 5 minutes).  Transfer to a plate using a slotted spoon.  Add 1 diced large sweet onion, 1 large carrot cut into matchsticks, 1 minced garlic clove, & a teaspoon of paprika to the pot.  Cook till softened (about 5 minutes).  Add one drained 28 oz. can diced tomatoes.  Cook till the liquid has evaporated.  Return chorizo to the pot, add shrimp broth & bring to a boil.

 

Stir 1 tablespoon flour with 2 tablespoons water.  Whisk it into the soup & boil for 2 minutes.  Season with salt & pepper.  Add the shrimp to the soup.  Cook till pink & curled (about 2 minutes).

 

Ladle the soup into bowls and top with sliced avocado.  Serve with artisan breads & accompany with Cañon de Sol Syrah.
