The
chill of Fall is upon us. And, now, a warm
meal seems
to be a favorite craving. Please enjoy this
simple simmering dinner you can cook up in your
crock pot.
Mediterranean Chicken Breast & Wild Rice
With sea salt and black pepper, season 1 lb.
boneless skinless chicken breasts lightly
pounded. Place in slow cooker with the
following: 1 cup wild rice; 10 cloves of
garlic, crushed; 1/2 cup sun-dried tomatoes
packed in oil, 1/2 cup capers, drained; 2 cups
water; 1/2 cup fresh lemon juice; and 1/4 cup
extra virgin olive oil.
Stir once to coat chicken. Cover and cook
on low for 8 hours.
Serve
with fresh steamed asparagus and artisan bread.
