HAPPY
NEW YEAR! It is a custom in many areas to eat
a New Year's meal for luck in the coming year.
Whether at the holiday or through the month of
January, it can't hurt to attract good fortune while
enjoying good food. A favorite meat in many
cultures is pork, for it represents prosperity.
After all, pigs root forward, symbolizing progress.
Increase luck and pleasure with yet another "Lucky"
dinner.

sprigs fresh rosemary, pulled from stem & chopped
garlic
paste

large carrot, sliced

medium onion1, peeled & diced
1
bunch celery, trimmed & chopped
12 red
grapes, sliced
salt &
pepper
1 cup merlot
Heat
oven to 375. Pour merlot in the bottom of an
8x12 baking dish. Season the pork with salt &
pepper. Mix garlic & rosemary. Rub meat
with garlic-rosemary mixture and set in the baking
dish.
Place
carrots, onion, celery, & grapes along side of the
meat. Cover with tin foil & bake for 60
minutes. Uncover & turn the pan juices into a
pot and heat on the stove; reduce to a sauce.
Continue to bake pork till done to taste.
Slice meat into medallions. Drizzle with reduction
sauce. Serve with asparagus & artisan bread.
